Baby Herron Has a Nickname

When I was pregnant with Abbey we didn’t have a nickname for her. It was simply “Baby Herron” until the day we found out that “baby” was going to be our sweet Abbey Road.

This time it is oh-so-different because of Abbey. Baby Herron already has a nickname and is called this name affectionately by it’s older sister. Baby Herron is now referred to as “Squishy” or “Baby Squishy.” keep-calm-and-love-squishy

Sunday morning, as most weekend mornings now, started with Abbey kissing my belly and then poking my belly button and saying, “morning Squishy” and then gave my belly a kiss and sweet hug with her sighing, “awww momma.” Of course my heart melted a million times over for that sweet moment.

The name is  already catching on, when we went to Grandma and Papa Herron’s house last night Papa started referring to the baby as “Squish” and telling Abbey that she gets one rocking chair and Squish gets the other when they visit. As you see, Dora in Finding Nemo claimed that a ocean creature would be called Squishy and a really cute line from the movie was created. Perhaps we can find Abbey a big sister t-shirt with this line on it {or I’ll just make one}.

As much as I can’t wait to find out if we are having a girl or boy I’m at least happy to not refer to the baby as “IT” even if it is an odd nickname, it is still cute. I’m guessing no matter what we name the baby, Abbey will ultimately have the final say in what the baby will actually be called!

The Herron’s Have Fun News

This is one of those really exciting times that we have wanted to share for a while now but wanted to make sure it was the right moment. Well, that moment has come and now it’s time to share our super-duper fun news.

George, Abbey and I all got to hear Baby Herron’s heartbeat last week. Dr. Caligaris looked at Abbey when we were listening and told her “that right there is your competition” boy does he know her well. How do you tell a 22 month old that she is going to be a big sister? I’m not worried, Abbey loves babies and I’ll just pray that she loves her new baby as much as the ones she gushes over at the store or park.

Baby Herron (who needs a nickname) will be making his or her presence into this world next March. I’m 13 weeks along and popping out already – oh yeah and I’m already rocking some maternity clothes. I forgot how wonderful maternity pants were, so comfy!

As I’ve always done, I’ll be tracking the pregnancy here and documenting week 13 through the end of March when we get to meet our baby. So follow along, I’m sure it will be fun!!

The Most Important Meal of the Day, #Breakfast

My little one has always been a good eater, I’m lucky and I know this lovely fact. Breakfast is no different but there was always this need to literally have the exact same thing every morning – 3 mini pancakes, fruit and yogurt. I really hated the fact that I was feeding my kid yucky microwave pancakes every morning and tried making her french toast with the best organic eggs and wheat bread. The response to the french toast was NO. How about I make blueberry pancakes since I have a connection to the very best blueberries in the tristate? The response to the gluten free blueberry pancakes was okay for the first few days then she went back to the yucky pancakes.

Just recently we have been saying NO to the pancakes, win for mommy! But crap, what do I feed her now?

This morning we tried Fruit-O’s and milk. A real bowl of cereal and milk for my big girl!

Cereal and Milk #BreakfastI think it is safe to say that Fruit-O’s and Milk was a big HIT for my little bed-head girl this morning. I do think it is funny that she automatically knew to just tip the bowl to finish the delicious milk at the end of a nice bowl of cereal.

What do you feed your growing toddler for breakfast? I’m assuming this won’t last long and I’ll need more ideas fast!

Abbey and the Sunflowers at 20 Months

For the second year we have had the opportunity to get pictures taken in the Sunflower field at Cottell Park in Mason, OH. The setting is always breathtaking and for the second year in a row we have completely lucked out on the weather. I was almost giddy when I saw the first sign of bloom at the corner of Snider and Irwin-Simpson Road, had to take a few iPhone pics myself and let Gayle know that we were ready for the pictures in the sunflower field. There are several reasons why these are among my absolute favorite pictures of Abbey; we are in a field of sunflowers, my photography genius cousin (Gayle Rothmeeler) is the one taking the photos, Abbey gets to run around and play at the park after we are done capturing the perfect shots and we always seem to luck out with the weather.

Here are just a few shots that I put side-by-side to show the comparison from 9 months old (last years photo session) and 20 months old. SHOEY that girl was a healthy looking baby! I miss those puffy cheeks.

{Recipe} A New Way to Make Pizza

I was able to make a pizza, eat the ENTIRE thing and still feel great about myself and the food choices that I made. I made a pizza with cauliflower crust. Wait, don’t click out of my blog post just yet, it was tasty!

I used an entire head of cauliflower – this actually yielded two individual pizzas (yes that is a frog bib, do you expect anything else from me?). Don’t forget to pre-heat your oven at 450 degrees!ImageAfter washing, break all the cauliflower up into smaller pieces.

348Go ahead and fill a pot with water, and once boiling, dump your cauliflower pieces in for about 6-8 minutes.

Once your pieces have boiled long enough, drain (but keep hot) and pat moisture with paper towel. Add to food processor or mash with spoon so that you have a “mashed potato” consistency.

350Measure out 1 cup of the mashed cauliflower, add 1/4 cup egg beaters and 1/4 cup low fat cheese (I used mozzarella but heard that Three Cheese Blend has less moisture and will help with the crust not being as mushy).

351This entire bowl (above) creates ONE individual pizza crust. Once you have mixed your crust you’ll want to spray a crazy amount of Pam on a cookie baking sheet or parchment paper/wax paper would probably work okay too. Go ahead and pour mixture onto the baking sheet in a circular shape. I used my rubber spatula to shape and pat down so it wasn’t too thick. I’ve heard others use a springform pan but I think that just adds to the clean up which is the WORST part of cooking IMO.

352 Bake for at least 15 minutes, I would even recommend 20 to make sure the middle isn’t mushy. Again, one head of cauliflower will yield 2 individual pizza crusts.

353You’ll know your crust is close to done when the edges start to brown and look crispy. Again, I put mine in for 15 minutes and should have gone more like 20 minutes.

354Once your crust is done, wait a few minutes for it too cool then flip it over and add toppings. If you are following a Lean and Green meal, here is a sample ingredient list that is helpful for your plan:

Crust:
1 cup Grated Raw Cauliflower or 100 g (2 Greens)
1/4 cup Egg Beaters (1/8 Lean)
1/2 cup or 2 oz 2% Reduced Fat Three Cheese Mexican Blend (4/8 Lean)
1/8 tsp garlic powder – optional (1/2 Condiment)
1/4 tsp basil – optional (1/4 Condiment)
Toppings:
1/4 cup + 2 tbsp or 1.5 oz 2% reduced fat Mozzarella cheese (3/8 Lean)
1/2 cup Italian diced tomatoes or Rotel tomatoes, canned – less than 5 g of carbs per serving (1 Green)
Go ahead and put the pizza back into the oven at 350 degrees for about 5 or so minutes to let the cheese melt.
355And once the cheese is melted you’ll have a delicious individual pizza to enjoy!
356 1 Complete Lean and Green Meal, 3/4 Condiment (Not even 1 Condiment!), with no Healthy Fat required. I honestly almost couldn’t finish this pizza because it was so filling.
